DelighTeas Masala Chai Mini Muffins

They are a great snack, an easy breakfast, a tasty afternoon treat, and are SO easy to make and then grab-and-go. Makes an excellent choice for post-travel to help ground yourself and excess Vata (movement) energy. Small, yet fierce with flavor 🧡🤎

1 cup rice flour

1/2 cup oat

1/2 tsp. of Masala Chai Blend (more or less, depends how strong you like it)

1/4 tsp. Sea salt

1/2 cup melted ghee (or coconut oil)

2 tbsp room-temp water

2 tbsp maple syrup

2 tbsp room-temp water

3 shredded medium carrots

2 chopped Medjool dates


Mix all dry ingredients In a medium bowl. In a separate small bowl mix all wet ingredients, combine the two bowls and add the carrots and dates. Arrange in mini muffins trays, and bake for 22 min on 350F.
